A Chef’s desire to find quality produce for his kitchens in the Kruger National Park, led Clinton Drake, Formerly Executive Chef of Singita Lebombo 2005 – 2008 (www.singita.com) to drive to the Maputo Fish Market every week for almost 2 years to fetch the finest seafood Mozambique had to offer.

Frustrated with frozen and poor quality fish coming from companies supplying out of Johannesburg, driving 260km to the nearest
port of Maputo, seemed a logical option for a chef with passion for his quality of food.

The Fresh Fish Company idea was born when Clinton Drake decided to take a break from the pressures of the kitchen of one of the top lodges in South Africa and turn his hand to selling top quality fish to Lodges, Restaurants and other Retail outlets.

Using the contacts built up over the last 2 years in Mozambique, The Fresh Fish Company buys fresh fish and export quality seafood direct from the boats in Maputo’s “Porto de Pesca”, bringing some of the freshest produce direct to game lodges, hotels and restaurants that are considered to be in the bush, no where near an ocean ... !

All the fish is long line caught, so there is little unwanted bycatch and the boats are rigorously examined to ensure the cold chain is never broken.

With this level of concern into product quality, you can be sure that you are getting the freshest fish available.

Clinton Drake has over 11 years of cooking experience in over 6 countries and 4 continents. Clinton has worked under some of the industries finest names including Michel Troisgros, Thomas Keller, Garth Stroebel and Roger Verge in restaurants that repeatedly achieve “top 10 in the world” status.

Clinton has won awards of his own that prove his dedication to the food industry including:
